What you need
- 4 medium carrots
- 1/4 Swede
- Peas
- Sunflower seeds
- Parsley
- Olive oil
- Salt&Pepper
- Cardamom & Turmeric
How
Prepare a pan with diced swede and carrots, add some water, salt, cardamom, turmeric and parsley. Cook for about 15-20min, covered.
In a different pan, stir fry garlic with a spoon of oil, after few minutes add carrots finely cut. When the carrots are brown, add Pease from the can, sunflower seeds, salt pepper and coriander.
Serve the soup warm guarnished with the pan fried vegetables and seeds. Add some olive oil.
