nonna Costanza’s Bespoke Cake

Costanza

6 people | 15 min. preparation + 45 min. baking

What you need


  • 4 eggs
  • 150 gr. sugar
  • 100 ml. olive oil (coconut oil / sunflower oil)
  • 80ml. milk
  • 250 gr. flour
  • 1 spoon baking powder
  • lemon zest
  • salt

How


Preheat oven to 180 degrees. Grease or lightly spray a 23cm baking pan and set aside.
Cut all the ingredients for the filling and flaworing and set aside.
Start by beating egg yolks and sugar.
As soon as you have a homogeneus cream, add the olive oil.
Mix the flour, the baking powder and salt toghether, and start adding it to the cream.
Add milk.
beat the egg whites and softly add it to the batter.
Add lemon zest or cinnamon.
Now you are ready to add to the batter you favourite ingredients:
FOR THE CHILDREN
roughly cut milk chocolate bar
FOR MUM
yogurt (in this case, use half the milk) honey (reducing the sugar) and apple dices
FOR DAD
a mixture of almonds, walnuts, haselnuts and raisins
WINTER WITH FRIENDS
roughly cut dark chocolate bar, a mixture of almonds, walnuts, haselnuts and raisins, orange zest and banana dices.
AUTUMN – BERRYS
add mixture of berries – Blueberry, Raspberry and Blackberry
OR
add almonds and persimon dices
DURING SUMMER
yogurt (in this case, use half the milk) mint and apricot dices
SPRING
add cherries and a spoon of sweet liquor
Bake in preheated oven for 45 minutes, or until top is set. Check for readiness by inserting a toothpick into the center; it needs to come out clean.
TO SERVE
Sprinkle some icing sugar on top.
Add some almond flakes.
