Besciamella – White Sauce

What you need

  • 50 gr. unsalted butter
  • 80gr. flour
  • 5 glasses of milk, heated
  • Salt
  • Pinch of ground nutmeg


Warm the milk over medium heat you just want it to be warm, like around 110 F, not hot, and certainly not boiling.
Start by melting the butter in a saucepan over medium-low heat.
Stir in the flour. 
Whisk in a little of the milk at a time, stirring continuously.
It will take up to 15 min for the liquid to thicken. It will be ready as soon as you have a smooth, slightly thick sauce.
Remove from the heat and seaon with salt and nutmeg.
