Special Primavera Sandwich

What you need

  • fresh ciabatta bread
  • 2 eggs
  • 6 asparagus
  • 6 pecorino slices
  • rocket salad
  • 1 ripe avocado
  • sesame seeds
  • salt
  • pepper
  • lemon juice
  • 50ml milk
  • extra virgin olive oil


Cut the aspargus longitudinally in half and grill in a pan with some drops of olive oil and sesame seeds. Cook for about 10 min.

Meanwhile prepare the scrambled eggs. Beat the eggs in a bowl with salt, pepper, few ml of milk and grated pecorino. Pour in an already warm pan and cook for 3-4 min. As soon as it starts to densify, set aside – it will continue cooking a little bit.

Slice the avocado and season with salt, pepper and lemon juice.

Heat the 2 ciabatta bread portions and slice in half.

Layer the bread first with rocket leafes. Then add sliced avocado. On top of it lay the rosted asparagus, top with scrambled eggs and add a final touch with some extra pecorino slices.
