Pisco Sour – Peruvian Style

What you need


The proportion is 1 unit of each element (25ml) per person

  • 50ml Pisco
  • 50ml lime juice (2 lime)
  • 50ml sugar syrup (jarabe de goma)
  • 2 egg whites of small eggs
  • 3-4 ice cubes
  • few drops of amaro del capo (Amargo Chuncho or Angostura bitters)
  • lime slices, to serve (optional)

How


Pour the egg white into a blender together with the sugar syrup and blend for 10 secs.  Pour the Pisco, lime juice and the ice and continue blending for further 20 secs. 

Strain into 2 glasses. 
Add a few drops of Amaro del Capo (Amargo Chuncho or Angostura bitters) to the top of each cocktail, garnish with a lime slice and serve.
To prepare the sugar syrup.
Add 4 spoons of brown sugar to a cup of water and boil for 5-8min. Let it cool before using it.
Make sure that all the ingredients are very cold and that the eggs are fresh.
