What you need
- savoiardi biscuits (sponge fingers)
- 500gr mascarpone cheese
- 120gr sugar
- 4 eggs
- Cocoa powder
- Dark chocolate bar
- Coffee
- Liquor
How
Start by making coffee. Pour it into a shallow plate and mix it with 2 tablespoons of water and 1 of a sweet liquor(Marsala/Porto/Rum/Cherry).
Cut the chocolate into flakes.
Now start to prepare the cream. Put the egg yolks into a bowl together with the sugar and beat until the mixture forms a light, pale mousse. Add mascarpone and beat well until the mixture is smooth. In a third separate bowl whisk the egg whites until they form soft peaks. Now lightly fold this into the mascarpone mixture and then put the bowl to one side. Next, dip the sponge fingers briefly into the coffe mix, turning them over – they will absorb the liquid very quickly. Now simply layer the dessert by putting the soaked biscuits into a casserole followed by a layer of mascarpone mixture, cocoa powder and a layer of chopped chocolate. Repeat the whole process to have 3 full layers, finishing with chopped chocolate and a final dusting of cocoa powder.
