Wine Doughnuts – Rome’s countryside

~25 doughnats | 15min + 20 min oven
wisky glass, spoon, bowl, tray, parchment paper

What you need

  • 500 gr. flour
  • 1 glass of wine (the taste will be slightly different depending on the type of wine you’re using)
  • a spoon of rum
  • 1 glass of extra virgin olive oil
  • 1 glass of brown sugar (~180gr.)
  • a pinch of salt
  • half spoon of baking soda

Preheat the oven at 180°C.
Mix the flour with the baking soda and salt.
In a bowl, mix the wine, the rum, the oil and ½ glass of sugar,
then incorporate the liquid a little at a time to the powder, until the dough becomes enough thick and silky (use your hands).
Pour the remaining sugar on a plate, and cover a large baking tray with the parchment paper.
Roll little pieces of dough and shape them into doughnuts (~6cm diam).
Place each cookie on the plate with the sugar and coat it evenly, then put it in the tray and bake for 20 minutes.
Cook until they start to brown – Don’t overcook them, otherwise they’ll become too hard.

Enjoy the delightful crunchy biscuits!
