What you need
- half celery root
- 2 carrots
- 1 apple
- 1 slice of ginger
- parsley
- 1/4 tspn fennel seeds
- turmeric
- 2 tspn olive oil
- salt and pepper
How
Heat the oil in a large saucepan on a medium heat.
Add the finely chopped celery root, carrots, apple and half the parsley.
Add a glass of water and the fennel seeds, bring to boil then cover and simmer for 15 minutes.
Add the Ginger and blend the mixture until smooth. If it is too thick, add a little more warm water
season to taste – turmeric, pepper
TO SERVE
Chop the parsley finely and sprinkle the turmeric and the pepper to garnish the soup before serving.
