What you need
- 1 big cleaned squid
- 3 Tbsp olive oil
- 1 garlic clove
- 4 Tbsp white wine
- 1 big can of tomatoes sauce
- Salt and pepper
- 1/2 cup parsley, chopped
- Lemon juice
Heat olive oil and garlic in a large pot over medium-high heat. Stir until it begins to color. Add the tomato sauce and stir well to combine. Add half the parsley, salt and pepper and cook this for 10 minutes, stirring occasionally. Add the red wine, stir well, and increase the heat. Boil until the liquid is a bit reduced.
Add the squid and boil for 2-3 min.
The squid should stay tender, do not over cook.
You could add some black olives
Serve in a bowl on a plate with some crispy bread slices. Add the remaining chopped parsley, olive oil and some drops of lemon juice.
