What you need
- mixed leaf salad ( gallinella, rocket salad and green batavia)
- pan fry small diced aubergine
- sunflower seeds
- parmesan slices
- lemon juice, pepper and olive oil
Cut the aubergine in small dices. Heat a tbsp of olive oil in a large pan and and roast the aubergine dices. Season with salt and pepper.
Slice the radishes in very fine slices.
Combine the mixed leaf salad with the aubergines, the parmesan slices, the radish slices, the pomegranade seeds and the sunflower seeds.
Season with salt, pepper, lemon juice and olive oil
