Crunchy Bread with Spinach&Eggs

What you need

  • 4 eggs
  • 4 slices of fresch bread
  • salt
  • pepper 
  • 1 glove of garlic
  • olive oil 
  • spinach


Bring a small pot of water (enough to cover eggs) to a boil.

Gently drop eggs into the water one at a time.

Set your timer for 6 minutes. You could go for 5 if you like really runny and 7 if you’re more into a harder/gooey yolk.

Then remove promptly and place in a cool water bath or run under cool water for around a minute. This stops the cooking.

Boil the spinach for 5 min in salty water. Rinse and saute the spinach with garlic and olive oil.

Meanwhile toast two thick slices of fresh bread.

Lay a thick foundation of spinach on the bread slices and add the sliced eggs on top.

Sprinkle with pepper and olive oil.
