Mezzemaniche con Broccolo Romano

What you need


  • 200gr. Mezze maniche
  • 30gr walnuts/ pine nuts
  • 8 olives – taggiasche
  • anchovies
  • half small broccolo romano
  • 1 garlic glove
  • pecorino cheese grated
  • 50 gr. burrata for decoration
  • extravirgin olive oil
  • chilly flakes
  • parsley

How


Boil the broccoli in salted water, then sauté them with garlic, olive oil and chilly in a pan. Take off the garlic before putting half of the broccoli in a mixer and blend it together with 4-5 spoons of their cooking water. Cook the pasta in boiling water using the same water where you have previously cooked the broccoli. Put the pasta in a pan with the broccoli and the broccoli cream. Add the previously toasted pine nuts, and olives [or raisin (already soaked in water for at least 5 minutes)]. Add the grated cheese and few drops of oil.

Decoration: place a small spoon of burrata on top, add 4-5 extra pine nuts, few chili flake to add colour and an anchovy to top the pasta before serving.
